CHICKEN CHOW MEIN
Brown Lightly in 2 Tablespoons hot butter:
4 Tbsp. minced onion
1 cup sliced mushrooms
Add and Simmer 15 minutes:
1 1/2 Cups Shredded cooked chicken (I've also used turkey for something different right after Thanksgiving)
1 cup diced celery
1 1/2 cups chicken broth
2 Tbsp. Soy Sauce
1 Tbsp. sugar
Blend and stir into meat mixture:
1 1/2 Tbsp. cornstarch
Dissolved in:
3 Tbsp. COLD water
Cook until slightly thickened and clear.
Serve over hot rice with chow mein noodles.
